Spicy Fried Chicken Heaven

Forget KFC or the backstreet places, where you get a free helping of food poisoning from time to time. So this is my own adapted recipe. Yup,  my version of fried chicken. It’s not Southern Fried Chicken, bollocks to that. If anything it’s Northern Fried Chicken. You can make this to your own taste, but give this version a try first.

Into The Kitchen We Go

You can change the spices both in terms of chosen ones and the amounts used if you wish to suit your own tastes.
I’ll not go down the smutty route of are you a thigh, leg or breast person.

Marinade ingredients:

Chicken portions [with or without skin]

1/2 pint butter milk.

Other ingredients:
3 cups of gram flour [sieved]
1 tbsp dried chives
salt and pepper to taste
1 tbsp paprika
2 tsp cumin seeds
1 tsp turmeric
1 tsp cumin powder
1 tsp coriander powder
1 tsp Madras powder
1-2 tsp cayenne/chilli powder

Method:
Marinate the chicken in the butter milk for at least 2 hours or overnight I prefer to leave these overnight, I find you get a deeper depth of flavour. Start off and we sieve the flour and add the other ingredients and mix well. As I said at the start you can mix, chop or do whatever you want with the spices and the quantities listed. Try leaving out the paprika and doubling up on the madras if you like it hotter.

When ready to cook put the fryer on medium heat and let it warm up. Next we will place the chicken into the flour mix and coat well. Ensure an even coverage, and no missed gaps. We then place into the fryer and cook on medium heat until the liquid runs from the chicken.

This is when you can prepare a baking tray with wire rack and turn on the oven to heat up. Go to Electric oven 190°C or for a fan oven 170 °C. We use gas, so it’s gas mark 5 for us.
Now place the chicken pieces into the pre-heated oven on gas 5 for 10-15 minutes to finish off the cooking.
Your spicy fried chicken will soon be ready to serve.

Final Thoughts

Serve with a cold beer and a dip of your choice, either BBQ or mayo. These go well with sweet potato fries and a dip. Check this recipe here on KitchenRadar.

I’m damn sure you’ll enjoy this but if not, go and buy the deep-fried greasy stuff from the takeaway. Yeah it takes time to do this yourself, but you know it is fresh, it is cooked and it’s not been reheated from the night before.

Yeah, yeah it’s easy to pick up the phone or go online and order in a take away, but doing this yourself means you can experiment with the taste and add more spices if you want it hotter. Another thing to keep in mind is that you know everything that is going into your own dish.  No more hidden extras in there, this version means you know exactly what is in the pot.
