Ingredients For This Chicken Bhuna Recipe

 

Chicken Bhuna On The Bone
8 chicken thighs
2 Onion chopped
2 tbsp Ginger Garlic Paste
1/2 tsp Black Pepper
1 Bay-leaf
1/4 tsp Cloves powder
1 tsp Cumin Powder
1 tsp Garam Masala
1/4 tsp of each Mace and Nutmeg
Powder
1 tsp Salt
1 tbsp Red Chilli Powder
1/4 tsp Green Cardamom Powder
1 1/2 cups Yogurt
1/2 cup Ghee
Coriander Leaves for garnishing
Method;
Remove the skin from the chicken then begin to fry in a large pot. cook until sealed then remove and put to 1 side.
In the same pan add the ghee and the onions and fry for 15 minutes until soft then add the garlic and ginger.
Stir well and cook for a further 2-3 minutes.
Add the chicken back to the pot and cook for 5 minutes.
Now remove the pot from the heat and stir in the yoghurt, this should stop the yoghurt from splitting.
When fully mixed place back onto the heat and add the bay leaf and all the other spices.
Stir well and simmer for 5 minutes then add 1 cup of hot water {add more or less if you want it a different thickness] At this stage add the salt and pepper.
Just before serving add the coriander and enjoy!
